Almond Butter Protein Bites Recipe

Almond butter protein bites

A healthy spin on sugar-loaded fudge, these almond butter bites are deliciously moreish. Salty and sweet, creamy and nutty, they serve as perfect post-workout fuel, a nutritious mid-morning snack, or satiating afternoon treat when you need to fix a craving.


Ingredients

5 tbsp. almond butter (we like Meridian Organic Smooth Almond Butter)
6 tbsp. agave light syrup (we like Biona Agave Light Syrup Squeezy)
2 tbsp. coconut oil (we like Biona Coconut Oil 400 Organic)
14 dates Crazy Jack Org Ready to Eat DatesP)
Pinch of sea salt
Flaked Almonds


Method

Combine the almond butter, agave, coconut oil, and salt in a pan over low heat. Heat until it becomes thick in consistency, but take care it doesn’t boil.
 
Decant the mixture, along with the dates, into a food processor and blitz until smooth.
 
Pour the mixture into a lined loaf tin. Scatter over flaked almonds and an extra sprinkling of salt.
 
Leave to set in the fridge for a few hours. Once set, cut into small pieces and store in the fridge.
