Energy balls are full of nutrients! High in protein, healthy carbs, fats and fibre, they make a perfect mid-morning or afternoon snack! These little balls with give you energy, are easy to make and contain all the right ingredients to keep you sustained! Lets get baking.
Apricot balls
Ingredients
250g cashew nuts (014-500)
150-200g apricots (019-500)
2-4 tbsp unsweetened desiccated coconut to finish
Method
Soak the apricots for 5-10 minutes in hot water. Add the nuts to a food processor and grind – either roughly or finely depending on your preference. With the processor running, add the apricots slowly until the mixture starts to clump together – the exact amount will vary. Roll into balls and then into the desiccated coconut and keep in an airtight container. You could add spices or vanilla to this recipe.
Chocolate Ginger Balls
Ingredients
250g Deluxe Mixed Nuts (026-500) (these can be substituted with any individual nut of your choice)
200-250g Pitted Prunes (023-500)
A few pieces of Crystallised Ginger (024-500)
25g cocoa powder.
Method
Add the nuts to a food processor and grind – either roughly or finely depending on your preference. With the processor running add the cocoa powder and ginger (to taste) then add the prunes slowly until the mixture starts to clump together – the exact amount will vary. Roll into balls and keep in an airtight container.
