Ingredients
100g dairy free margarine
100g dark chocolate chips
100g soft brown or coconut sugar
70g pecan nuts + extra for topping

50g plain flour
30g pea protein powder
(Nature’s Best Pea Protein Powder CODE: 350)
2 eggs
¼ teaspoon baking powder
¼ teaspoon salt
Grated zest of 1 unwaxed orange
Method
Line a square baking tin with baking parchment.
Preheat the oven 180°C.
Set a clean frying pan on medium heat and dry roast the pecan nuts, remove from pan and leave to cool.
Melt the margarine and chocolate chips over a bain marie, stirring occasionally till melt.
Add the orange zest and set aside to cool.
Whisk the eggs with an electric mixer adding sugar a little at a time.
Gently fold in the chocolate mixture into the egg mix using a capital G motion.
Add the flour a tablespoon at a time, making sure to fold in well before adding each tablespoon.
Break up the cooled pecan nuts in large chunks, then add to the above mixture, stir through.
Pour the mixture in the prepared baking tin.
Bake for 20 minutes.
Insert a clean tooth pick in centre of the brownie, if it comes out clean it’s done – if not return to oven for another 5 minutes.
Leave to cool fully before storing in an airtight container.
